Anzac Biscuits

Makes Approximately 30 biscuits.

Ingredients:

• 1 ½ cups Rolled Oats
• ¾ cup plain flour
• ½ cup desiccated coconut
• ¾ cup sugar
• 2 tablespoons golden syrup
• 125 g butter
• 1 teaspoon bicarbonate of soda
• 2 tablespoons boiling milk or water

Method

  1. Preheat the oven to 160°C. Mix the rolled oats, flour, coconut and sugar together in a bowl.

  2. Melt the golden syrup and butter together. Mix the baking soda with the boiling water/milk, then add to the butter.

  3. While the mixture is still foaming, add it to the dry ingredients and mix well.

  4. Place heaped teaspoonfuls of the mixture onto greased trays. Bake for 15 minutes.

  5. Transfer the biscuits to wire racks to cool. Store in airtight containers
