Thai Green Curry with Barramundi
This Thai Green Curry is off set with Barramundi to give a gorgeous texture and mouth watering taste that is sure to get friends and the family’s taste buds going. Thai Green Curry is an ideal easy fish dish to make when catering for large social functions or a fancy evening in.
Fish Ingredients
• 1 piece Barramundi
• 1/2 teaspoon Lemon Myrtle
• 1 tablespoon Butter
Sauce Ingredients:
• 1/2 tablespoon Butter
• 2 small Onions, finely sliced
• 1 clove crushed Garlic
• 5cm piece Lemongrass, thinly sliced
• 1 teaspoon green curry paste
• 1 teaspoon diced Ginger
• 1 tablespoon finely chopped Sea Parsley
• 1/2 teaspoon Lemon Myrtle
• 1 teaspoon Ground Pepper Berry
• 1/2 Lemon
• 1 cup fish stock
• 1 ½ cups coconut cream
Method
For the fish:
- Melt butter in a hot pan, add the Barramundi and sprinkle with lemon myrtle. Sear off, then place a lid on the pan and cook through.
To Make the Sauce:
- Melt the butter in a pan, and gently fry onions. Add garlic and curry paste. Stir in the fish stock and coconut cream, then bring to the boil. Allow to reduce a small amount and then add lemon grace, ginger, and the juice of ½ a lemon. Sprinkle with lemon myrtle and stir through.
- Remove cooked Barramundi from the pan, gently break into chunky pieces and add to the sauce. Stir through chopped parsley and serve.
- To Serve: serve with boiled rice, garnished with thinly sliced lemon zest and shaved ginger.
